Ingredients

  • 4 medium potatoes
  • 1/4 cup corn oil
  • 4-5 cloves garlic
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon ground cumin
  • 1/2 cup fresh cilantro
  • 3 tablespoons fresh lemon juice
  • Salt and black pepper

How to prepare?

  • Prep the Potatoes: Preheat your oven to 400°F (200°C) or prepare an air fryer. Pat the cubed potatoes dry with a paper towel to help them crisp up.
  • Season and Roast: Toss the potato cubes in a bowl with 1-2 tablespoons of olive oil, a pinch of salt, and black pepper. Spread them in a single layer on a baking sheet. Roast for 25 to 30 minutes, turning halfway through, until golden brown and crispy.
  • Make the Garlic-Herb Sauce: While the potatoes roast, heat the remaining olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant (do not burn the garlic). Stir in the ground cumin.
  • Toss Together: Add the crispy roasted potatoes directly into the skillet with the garlic-chili oil. Toss gently for 1-2 minutes so the potatoes absorb the flavors.
  • Finish and Serve: Remove from heat and stir in the fresh lemon juice and chopped cilantro. Serve warm as part of a mezze spread or as a side dish.
